For a fabric look take a picture of an oxford shirt, table cloth or anything with definition to it. Use that photo as an overlay and blend away until it looks right.

Also, Mister Retro has lots of great textures, which also include some fabrics.

There are tons of tutorials here at SBB, which you can find HERE.

A lot of it is playing and learning your program and do things that you love not what everyone else loves. If you love it more than likely someone else will too. Good luck.

Lori's right- I have learned alot about making elements through tutorials - even stitching. If you don't find what your are looking for in the tuts here check on the "Resources" tab at the top of the forum page for additional offsite resources.
I have some of the Nitwits stuff and after a close look alot of the dimension with the stitching is probably achieved with the dodge and burn tools... but haven't played with that myself yet. Just a hunch.

For fabric textures, take some pics (or scans) of some fabrics of shirts and stuff in your closet, change them to grayscale and change the size to 12 x 12 (you will need kind of a high pixel camera for this). Then you can place this file over your completed paper and play with the blending modes and opacity until you get the look you want. You can also put multiple files of fabric looks on your canvas to give yourself more look options.
