Tanya T's Bean's an' Cornbread

ok this is the easiest yummiest good for you thing.
( yeah i know i'm posting at 1 am pac time my most productive is at night when madison is asleep!)

Beans & cornbread

ingredients:
one bag dried mixed beans or bean soup mix ( usually costs about $1 !!!)
2 cans Rotel ( that's the tomato & pepper stuff you'll find in the canned tomotoe isle)
1 large onion
1/2 lb of ham cubed(if desired but it really makes it all that much yummier)
garlic powder
salt
pepper


soak the beans over night after washing. rinse again ( per bag directions)
place in pot ( pretty big stock pot as the beans increase in size) pour in rotel chopped onion, ham and seasonings to taste ( about 1/2 Tablespoon garlic powder in our house and not to much salt the ham is a bit salty)

stir and cover bring to boil then reduce heat to med/ med-low cook about 2 hours ( you can do this in a crock pot it jsut takes about an hour longer i think)

i use jiffy cornbread ( sorry no homemade cornbread from me!) every time i tried to make it it was gross so i stick with the cheap yet yummy Jiffy. we use about 2 boxes and have left overs.


you can pour the beans over your cornbread tanya style or just eat them seperate. either way the beans have so much flavor and alot of protein too.
( not a bean fan but i love this and it's a cheap meal too)

My granny just passed away at 92. She loved her beans and cornbread! LOL! This made me think of her. Also -you just reminded me that I forgot to put the ham away that I bought at the grocery store a little earlier. PHEW! Costs too much to throw away! Thanks for the reminder. Can't wait to try this!

YUMMY! I will have to give this a try. I love jiffy too. I have made homemade but Jiffy is easy and always turns out. I have been trying to add more beans and veggies to our diet and this is definitely something that we would eat! Thanks for sharing! -Ali
