Sausage Recipes

I'm on a budget lol and beef sausages have become menu staples. I'm looking for some creative things to do with sausages that aren't too fiddly.

I'd like to make the sausage part of the meal though I made Sausage Pie the other day that my dh liked (recipe below) I also regularly serve with egg and chips, mashed potato, packet pasta and fried rice lol. So if you have anything you recommend please share!

Sausage Pie
approx 6 -8 sausages
250g diced bacon
1 small onion finely chopped
1-2 cups grated cheese
1/2 cup plain flour
1 1/2 cup milk
3 eggs

Preheat oven to 160C/? F (low)
Grease a baking dish
Cook bacon and onion and set aside
Cook through sausages, cool then thinly slice
Arrange onion,bacon, sausages and cheese in base of baking dish.
Whisk flour and milk til smooth, add eggs, season as desired and whisk again. Pour over sausages.
Bake 45-55 mins til set - stand 5 mins before serving

First thing that popped into my mind was PIZZA...
Pre-cook the sausages and slice to make a topping (if they are the thick sausages), or cut into small chunks if they are the thin ones.

The recipe we use is here: Recipe Details - Robin Hood
We make 2 large cookie sheets of chili-cheeseburger pizza each Friday, and we have leftovers until Sunday night. One cookie sheet worth can feed 3 adults and 2 kids, but we have had other nights where the 4 of us ate 1.5 pizzas.

Basic toppings are sauce, then 454g cooked ground beef with chili powder and onion flakes added while cooking, then cheddar cheese, 2nd topping (tomatoes or other meat) and then mozza cheese on top (pepperoni on top of that if used). Last week I also added tiny chunks of breakfast sausage (beef/pork mix), and it was a hit. If we have bacon in the freezer, I will pre-cook that, chop it into tiny pieces and add it during the last 5 minutes of cooking. (Can you tell we've done this almost every Friday in 2008?) Most of these can be done up in advance and thrown in the freezer until you want to make a pizza too.

Nice thing with the pizza is that the kids can help to "decorate" it, and may eat it better when they get tired of sausages.

Hmmm I'd like to see something here too - @ the restaurant I am working at they always do the typical sausage, onion and peppers sub and oh they make the yummiest sweet & sour sausage and sourkraut soup!

I'm in the process of gathering recipes to make a cookbook for my niece, so I already had this Nacho recipe typed up. Right now we always use 2 lbs of hamburger, but the orginal recipe called for 1 lb hamburger, 1 lb sausage. It is very tasty either way.

Nachos

2 lbs hamburger (or 1 lb hamburger and 1 lb sausage)
chopped onion

1 can stewed Mexican style tomatoes (or you can use a can of Ro-tel tomatoes instead. If you use them omit adding the diced chili peppers)
1 can tomato soup
1 can nacho cheese soup
1 can diced chili peppers
½ package or more taco seasoning mix
a coupe of packages of co-jack cheese
chips

Brown hamburger and onion. Drain. Mix tomatoes, soups, and peppers into pan. Heat well.

Lay chips on baking sheet, spoon on mixture, smother with co-jack cheese and broil until cheese melts.

I have a good recipe, but my recipe files are still packed....when I get them unpacked, I'll get the recipe to you I'm going to have to try all these yummy ideas!
