Click on the text box so it is active, then go to Effects->Fill With Texture or Color->More Solid Color Choices.
You can then use the eye dropper to choose from something onscreen for your color.
You do not have to have the text highlighted, just have the text box active.
You can also fill text with pictures this way - which is pretty cool. You want to have big chunky letters to do this. If you want a different picture on each letter - make sure you put each letter in a seperate text box.
