Scanning just the image
When you scan something, usually you have a preview screen where you adjust the different settings. In the preview screen, you can usually select the area you want to scan (which also makes it faster). If you just select the area you want to scan you will eliminate all or most of the background. You can do more editng later in your photo editing software.
When I scan, I usually do it through my photo editing software. For example, in Photoshop, if you go file->import, you should see your scanner. Select that and it will pop-up your scanner software. Scan as usual, close the software when the scannng is complete, and your image should be in Photoshop. From there you can edit just like kristie suggested. Many of the photo editing software I have ever used has an import from scanner option. So if you do not have Photoshop, see if your software can do this feature.
