I downloaded an alpha set from the gallery that when unzipped looked like the entire set was printed on a piece of paper. So...how do I use these? Do you have to crop each letter you want to use? I tried to do that and lost the rest of the set except for the letter that I cropped. Really feeling dumb about this one!

Select the letter you want to use and copy it, then paste onto your page.

NO, not dumb! It is dumb not to ask and get frustrated like I did!
Use your selection tool sometimes works too - you know, the marching ants then just copy and paste.

Or after you select it you can also use your selection tool and drag it over to where you want it in your LO
