Well there is no getting around copyright when it comes to graphics. Any logos or identifying marks for a product are off-limits - like the bottle shape for coca-cola and their swirly label. What you can do is do more of an "inspired-by" kit. Using the same colors and mimicking the feel of the product. You have to be very careful on this though. If you can afford it you could always try to get a license to use the items, but they are very expensive.
As for using photos for brushes, you need to find out who made the photos and ask them. Make sure you save any written correspondence with them. Also, if the photo contains images of a copyrighted product you still could not use it without permission from the company. IE, a photo of a coke bottle or of a mickey mouse disney character.
You really have to educate yourself, by asking questions and doing research about the topic of interest. Issues include fonts, images, products and more. I have some articles bookmarked on my other computer and I will post them here as soon as I can boot my husband of the 'puter.
