I was making an invitation for my daughter's b-day. I wanted to spell out her name and fill each letter with a pic of her. I've done it and it looks really cute the only thing missing is that I want to outline the letters and I can't figure out how to do it. I use PSE3 and the way I did it was to use text of her name-on Impact, place the photo over the letter and control G. I got the pics on the font but can't get it to stroke outline. It doesn't give me the option

Ctrl click the original text layer in the layer pallette. Then make a new layer above the photo layer. You should have the stroke option now.
