Rochelle, the colour changes are based on the foreground/background colours. Set them to similar colours and the changes are minimal. Also if you have a high % Jitter set for Colour Blend, Hue, Saturation and Lightness you will see greater variance in your colour.
As usual the mantra is: practise! Small % changes for each of the able Jitter positions will give different effects and when you find one that you really like - save it!
