Then teh easy way is for you
Type your text, add your patterned layer above
Hit CTRL+ALT+G ( or right click on the paper layer and choose Create clipping mask) Move or size the paper to show what you want to
CTRL+Click the text and paper layers and right clcik and choose Merge Layers.
All done

I'll give it a try tonight.
I may sound a little frustrated at times, but I never have been one to give up on anything. As far as computer related issues, I've always been quick to catch on. However, I see now that having never used PS, that the learning curve is higher than others.
One of my weak areas, is masking, so I'm going to spend more time with the masking tutorials on lynda.com.
As far as the photo editing end of PSCS3, I'm having no problems, I think CS3 is fantastic, especially now that I take many photos in RAW.
The scrapbooking side is coming along a little slower, but with the help of the experienced users here, it will sink in eventually.

LOl Photohsop is notorious for it No one ever conquers it fully - I knwo I learn something new everyday - and there are always a dozen ways to do any one thing so part of the trick is figuring out what will get what you want done in the simplest manner.
If i can get some other stuff out of the way today Ill write up a proper tutorial for the above

The tutorial would work this way too.. you would just need to merge the layers thus removing the clipping mask. The clipping mask is just that.. a mask with the full layers still available underneath allowing you to reposition and choose the proper location for your design.

Glad you are liking CS.... it is so powerful!
