1. If its your Optiosn bar - where you choose the font etc, rather than your tools bar that is AWOL> go to Window> Options to bring it back.
4. Im guessing you have your color management set to Adobe RGB 1988 instead of Adobe sRGB though some people still use the 1988, sRGB tends to be used more. Choosing No is fine though
You can chnage the color profile to Adobe sRGB by going to Edit> Color Settings and changing to sRGB
