Just like in most text programs when you select the text tool you get options across the top. Options should appear for centering, left, right and justify text. Highlight your text and choose the option.

Also on the options bar when text is selected should be a button for the character palette where you can adjust spacing between lines and letters. hm not sure what you are asking here. But you should be able to move teh text over the top of the photo

"Shomehow I got it so my mouse buttons wouldn't let me "grab and pull" the various layers around. I couldn't even grab the slider to move up and down the various layers. I still don't have that fixed. Anyone have any ideas of what I might have done???"

To move a text layer around while the text tool is still chosen you need to hold down CTRL on teh keyboard and then click and drag the text. You can also select the move tool which will allow you to move the text around, and change the layer the text is on by moving it up or down
