There are hundreds of stores and each store has different requirements about exclusivity. How much you sell depends on any number of factores including the appeal of the kit, the traffic in the store, what else is available in that store or in any other store with a similar product. So you really cant generalise what your income could be. Your favourite kit could sell badly while one you thought was mediocre could be a strong seller.
There are a few who make the equivilent of a full time income as a digital designer but they are in the minority- the rest can be any range
Cost isnt always an issue - people wont necessarily buy the cheapest product - though some only shop when sales are on.
Design wise there is no one answer - it completely depends on the product. I have kits where I have made everything from scratch, kits where i have purchased and used commercial use products and kits where I have used items Ive scanned myself and all combinations.
Designing and selling isnt as easy as it looks - like any business there is a stack of behind the scenes considerations - for example selling at 5 stores - each store with their own commissions and store fees that are payable by the designer could eat into any income. Then there is the investment in advertising costs and time, etc etc
