Sometimes I can "force" fonts to show up in the font list by going to my fonts folder - c:\Windows\fonts by default, and then double clicking on the font that I'm trying to use. It should launch a second window that shows what the font looks like at different sizes. Keep that window open and then check your list in Photoshop to see if it appears now.
