I have a book that I just LOVE -- Scrapbook Tips & Techniques by Creating Keepsakes -- I have it marked up with post-its on ideas I want to use (someday! LOL!!).

ANYHOW, there is a great section called "25 ways to include more photos". It sounds like this could solve your dilemma. I really liked a couple of LO's in there where they did a 4x4 grid, and put photos in some of the boxes, solid papers in the others. The point is, you can do LO's with a TON of photos, and not label and journal everyone of them to death, so it can go quickly.

There is another cool page -- a cover page for a family album -- where the photos of various family members were cut the same size & used as tiles -- lined up in 2 rows of 9 photos at the top & bottom of the page with the title in the middle.

OK, so describing these pages is like trying to smell a color (ha!) but I think you get the idea -- you could do some LO's that incorporate bunches of the photos if you decide you really want to scrap them all (or most!!), the key I think is a really simply scheme (like the grid idea) so you can do it relatively quickly.
